Pierre Huet's 'Pommeau de Normandie' is made using traditional methods focusing on the 'mutage' (stopping fermentation by adding alcohol in order to preserve some sugar).
Roughly 2/3rds of apple must is made from apple varieties including Fréquin Rouge, Binet Rouge, Bisquet et Douce Moën. The balance is one-year-old-Calvados Pays d’Auge, that measures 68% - 70% alcohol.
The Pommeau de Normandie ages 36 to 48 months in oak barrels (14 months minimum authorized by the legislation).
