The Sangiovese grapes are hand harvested in small bins, 100% destemmed then lightly crushed. Fermentation takes place in concrete vats for two weeks, using wild yeast. The wine undergoes malolactic fermentation in barriques. The wine is aged in 25 hl Slavonian Oak. Its color is bright medium red with a aromas of redcurrant, sour red cherry, sweet roses, licorice, and tar, along with a hint of sexy vanilla oak. The palate displays sweet spices, tobacco and earth, nicely balanced with ripe firm tannins.
