Harvesting: The grapes are hand harvested, and transported to the winery in small drilled boxes of 20 kg.
Winemaking: The grapes are gently de-stemmed and crushed. The must macerates cold for a few hours with their skins, acquiring pink natural. Follows racking and fermentation at controlled temperature
On the lees: 30 months. Follows disgorgement.
Serve with: Excellent as aperitif or throughout the meal.
